Grill for about 3-4 minutes on each side for medium-rare

Ingredients:

4 lamb steaks (about 1 inch thick)
2 tablespoons olive oil
4 cloves garlic, minced
2 teaspoons fresh rosemary, chopped (or 1 teaspoon dried rosemary)
Salt and black pepper to taste
1 lemon (zest and juice)
Optional: Red pepper flakes for a bit of heat
Optional: Fresh herbs for garnish (e.g., parsley or mint)
Instructions:

Prepare the Lamb Steaks:

Take the lamb steaks out of the refrigerator and let them sit at room temperature for about 30 minutes. This helps them cook more evenly.
Preheat your grill or a large skillet (cast-iron works well) over medium-high heat.
Marinate the Lamb:

In a small bowl, combine the olive oil, minced garlic, chopped rosemary, lemon zest, and a pinch of red pepper flakes if you like a bit of heat. Mix everything together to make the marinade.
Brush the lamb steaks with the marinade on both sides. Season the steaks generously with salt and black pepper.
Grill or Pan-Sear the Lamb:

If using a grill: Place the lamb steaks on the preheated grill and cook for about 4-5 minutes per side for medium-rare, or adjust the cooking time to your desired level of doneness. Lamb is best when it's pink and juicy on the inside.
If using a skillet: Add a bit of olive oil to the hot skillet. Place the lamb steaks in the skillet and cook for about 4-5 minutes per side, or until they reach your preferred level of doneness.
Rest the Lamb:

Once the lamb steaks are cooked to your liking, remove them from the heat and let them rest for a few minutes. This allows the juices to redistribute, keeping the meat tender and flavorful.
Serve:

Squeeze fresh lemon juice over the cooked lamb steaks before serving. You can also garnish with fresh herbs like parsley or mint if desired.
Side Dish Suggestions:

Lamb steaks pair wonderfully with a variety of side dishes, such as roasted vegetables, couscous, quinoa, or a simple salad. Choose your favorite accompaniments to complete the meal.
